White Whole Wheat Flour



The whole wheat of grain is the wheatberry.  My dad used to grow red whole wheat.  The red wheatberry is more common in the United Stated.  When I make bread from red wheat it is VERY heavy and only once out of dozens of attempts have I had a load that I liked.
So, a nutritionist recomended I try white whole wheat flour.
Is white whole wheat flour just bleached flour?
No! Wikipedia states that White whole-wheat flour is flour milled from hard white spring wheat.  White whole wheat has almost the same nutrient content as red whole wheat.
So I put this bad boy in all kinds of things that call for flour; chocolate chip cookies, pancakes etc.
